Our monthly event.

Yesterday was the day for our Music Event that we hold on the 4th Sunday of every month. It seems to come around so quickly these days. But yesterday twas fun! Laura was here and Street Light band from Bayside came as well. It was a nice and welcomed change. Masa even managed to bring Yosh and the baby along. It's cute! I'd have forgotten, just a bit, how strange and crazy my sweet, cute friend Cherish was, but all the while admired her for being herself 100% and doing whatever she felt like with Joy and laughter all the while ignoring everything and everyone around her. Adorable. I'll post some pics worth all the lyrics in the songs they did.

Black Bottom Cupcakes.

We were blessed to receive cream cheese from our very good friend Tad. Yey! Today was our event and so I decided to make these...black bottom cupcakes. They were a hit and so I would like to share the recipe with all you nice folk.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 1 egg
  • 1/3 cup white sugar
  • 1/8 teaspoon salt
  • 1 cup miniature semisweet chocolate chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line two 12 cup muffin pans with paper liners. Sift together the flour, baking soda, cocoa powder and salt. Set aside.
  2. In a large bowl, whisk together 1 cup sugar, oil and water until blended. Stir in the vinegar and vanilla. Beat in the flour mixture until incorporated. Set aside.
  3. In a medium bowl, beat together the cream cheese, egg, 1/3 cup sugar and salt. Stir in the chocolate chips.
  4. Fill muffin cups 1/3 full with chocolate batter, then top with a heaping tablespoon of the cream cheese mixture. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes.

Everything and Nothing

I haven't posted in a while so, this is just random reports of old and new, with photo's of different events and happenings in the life...oki, here we go.

This is a "love tree" that we got from Akiko for C'mas...we kept it till recently, even tho it wasn't supposed to last that long...I guess we will too...maybe.

I made ton's of these for valentines day and our Valentine party.
I made these doughnuts during the feast for the kids snack...it was kinda experimental cuz we didn't have normal doughnut cut outs...so I used cookie cutters and they turned out to be quite cute!

This is Gene's fab eggs! I really liked these! He usually make the eggs on free day.
I made a few different pasta's during the feast...

...but the yakitori one was definitely the most experimental for me, but I was happy with the results.
We also had a girls night and ate yummy oden, since we are all kinda "watching the carbs"

I started making bread. And I am having fun, while making everyone happy.

Mike has just come back from Tony Robin's seminar and is on a health strike, and so to support him I made our weekly salmon with olive oil, rosemary, lemon, and salt, and some veggies. Mike was not they one that was happy.

And last but not least...recently I have been hurting myself a lot. :( and in through the most bizarre ways and happenings. Anyways one of the things is I was cutting a extremely stale hard french bread loaf that we were desperately trying to make into food because someone gave it to us and while I was cutting it it grated my finger and I still have the scar. crazy I know, and I ended up making it into french toast.
I also got the biggest blister ever on my toe...from jogging in the shoes I always use, on the 2nd day.

From Hobbiton.




You know the scene in Lord of the Rings when Sam was dreaming of "nice big golden taters" to go with his rabbit stew that he was making with the rabbits Gollum brought him!? Well I've always imagined them to look something like this. These actually came in provisioning yesterday, and I swear they were a beauty to behold. I've never in my life seen better spuds. They were diffidently from Hobbiton. HUGE!

Update on Angelo

A huge thank you to all those who prayed for Angelo and Joy's operation.

The transplant was a success and both Angelo and Joy are ok. Angelo's new kidney is functioning well so far and the doctors are positive. They are still in a lot of pain so they would need your prayers for their full recovery.

Please continue to pray:

-That their stitches will heal properly without infection of any kind and that they will not feel so much pain.
-That Angelo’s body will accept and not reject the kidney from his mom and that there will be no bad side affects from all the medicine that he will need to take from now on.
-For their recovery to be fast and complete and that the Lord will give them good health and protect them from getting sick. Angelo’s immune system will be completely down so he can’t afford to get sick at all.

Prayer is not the least we can do but it's the most we can do.
